Peanut Square Cakes
vanilla butter cake squares, frosted and rolled in chopped peanuts
Ingredients
- 240 g all purpose flour
- 200 g white sugar
- 113 g butter
- 150 g egg
- 4.2 g vanilla extract
- 9.2 g baking powder
- 122 g milk
Method
- Cake:
- 1. Heat the oven to 350°F / 180°C and grease and flour a 9×13 pan.
- 2. Cream the sugar and butter until fluffy, then beat in the eggs one at a time and the vanilla.
- 3. Sift the flour and baking powder together and beat into the batter in thirds, alternating with the milk.
- 4. Spread into the pan and bake until a toothpick comes out clean, 18–20 min. Cool completely, then cut into pieces.
- Frosting: Cream the butter, then beat in the powdered sugar alternating with the milk. Beat in the vanilla, adjusting milk or sugar to a soft, spreadable frosting.
- Coating: Chop the peanuts coarse. Frost the top and sides of each piece and roll in the peanuts to coat all but the bottom. Air-dry a few hours before storing.
