Breakfast Burritos
scrambled egg, cheese, and breakfast meat rolled in flour tortillas
Ingredients
- 200 g Egg
- 1.2 g Salt
- 0.4 g Black Pepper
- 14 g Butter
- 44 g Bacon
- 60 g Cheddar Cheese
- 130 g Flour Tortilla
- 60 g Salsa Roja
- 40 g Sour Cream
Method
- Meat: Cook the bacon in a skillet over medium heat until crisp, then crumble. For sausage, brown and drain; for ham, dice it. Weigh bacon or sausage cooked, since they lose weight in the pan. Pour off all but a film of the fat.
- Eggs: Beat the eggs with the salt and pepper. Melt the butter in the same skillet over medium-low and scramble in slow strokes until just set and still glossy.
- Assembly: Warm the tortillas in a dry pan until pliable. Down the center of each, layer the cheese, then the hot eggs and meat so the cheese melts, then the salsa and sour cream. Fold in the sides, roll tight, and toast seam-side down in the dry skillet ~1 min per side to seal.
- Hash browns: Cook from frozen in the reserved fat, or butter, until browned and crisp; tuck in before rolling.
