Chocolate Cake
one-bowl chocolate layer cake
Ingredients
- 210 g All Purpose Flour
- 64 g Cocoa, Unsweetened
- 7 g Baking Powder
- 7 g Baking Soda
- 400 g White Sugar
- 6 g Salt
- 100 g Egg
- 244 g Milk
- 109 g Vegetable Oil
- 8 g Vanilla Extract
- 237 g Water
Method
- Cake:
- 1. Heat the oven to 350°F / 180°C (160°C fan); grease and line two 9-in / 22 cm pans.
- 2. In a large bowl whisk the flour, cocoa, baking powder, baking soda, sugar, and salt.
- 3. Whisk in the eggs, milk, oil, and vanilla until smooth (~30 sec), then whisk in the boiling water; the batter will be very thin.
- 4. Divide between the pans and bake ~35 min, until a skewer comes out clean.
- 5. Cool 10 min, turn out, and cool completely before frosting.
- Frosting:
- 1. While the cake bakes, whisk the flour and sugar in a saucepan over medium heat 30 sec, then slowly whisk in the milk; cook, stirring constantly, until thick like a dolloping custard.
- 2. Scrape into a bowl, press cling wrap onto the surface, and cool completely.
- 3. Beat the butter ~3 min until pale and fluffy, then beat in the cooled roux a spoonful at a time.
- 4. Add the vanilla and salt and whip 2–3 min, until it holds peaks.
- 5. Frost the completely cooled layers.
