Grandma's Soft Oatmeal Raisin Cookies

Ingredients
- 300 g all purpose flour
- 205 g shortening
- 200 g white sugar
- 100 g egg
- 75 g water
- 4.8 g baking soda
- 4.5 g salt
- 2.6 g ground cinnamon
- 1 g ground cloves
- 180 g rolled oats
- 60 g walnuts
- 150 g raisins
Method
- 1. Cover the raisins with water and bring to a boil, then take off the heat and let them cool in the liquid; drain, reserving the soaking liquid (the water line).
- 2. Cream the shortening and sugar until light, then beat in the eggs and the reserved soaking liquid.
- 3. Add the flour, baking soda, salt, cinnamon and cloves and mix just to combine.
- 4. Fold in the oats, walnuts and raisins with a few strokes; don't overmix.
- 5. Drop spoonfuls onto an ungreased sheet and bake at 375°F / 190°C for 10–12 min, until golden and just set in the middle.
- (The dough runs on the higher-flour side so the cookies hold their shape rather than spread.)
