Gyeran-jang (Soy-Marinated Eggs)

Ingredients
- 300 g Egg
- 120 g Soy Sauce
- 120 g Water
- 36 g Brown Sugar
- 15 g Garlic
- 51 g Onion
- 36 g Scallion
- 9 g Sesame Seeds
- 9 g Sesame Oil
Method
- Eggs: Lower the eggs into boiling water and cook 9–10 min for firm yolks (6–7 min for jammy), then chill in ice water and peel.
- Marinade: Stir the soy sauce, water, and sugar until the sugar dissolves, then mix in the garlic, onion, scallion, sesame seeds, and sesame oil.
- Marinate: Submerge the peeled eggs in the marinade, pressing a sheet of paper towel onto the surface so the tops stay covered. Cover and refrigerate at least 6 h, ideally overnight, turning once. Serve halved over warm rice with a spoonful of the sauce and its aromatics. Keeps up to 4 days refrigerated.
