Oat Flour Sandwich Bread

Ingredients
- 400 g Bread Flour
- 100 g Oat Flour
- 240 g Milk
- 48 g Water
- 32 g Honey
- 24 g Butter
- 8 g Salt
- 5 g Instant Yeast
Method
- 1. Warm the milk to lukewarm and whisk in the honey and yeast.
- 2. Mix the bread flour, oat flour, and salt, then add the milk, water, and softened butter and bring together into a soft, slightly tacky dough.
- 3. Knead until smooth and elastic, 8–10 min; the oat flour makes it softer than a plain white dough, so resist working in much extra flour.
- 4. Rise covered until doubled, ~1–1.5 h.
- 5. Shape into a log, set seam-side down in a greased loaf pan, and proof until it crowns the rim, ~45–60 min.
- 6. Brush with milk and scatter oats on top if desired.
- 7. Bake at 350°F / 175°C until deep golden and ~195°F / 90°C internal, ~35–40 min.
- 8. Cool fully before slicing.
Notes
Gets its oat flavor from oat flour rather than rolled oats, for an even crumb.
