Pork Rice Paper Rolls

Ingredients
- 113 g Ground Pork
- 18 g Mushroom
- 15 g Shallot
- 15 g Scallion
- 8 g Soy Sauce
- 8 g Fish Sauce
- 1 g Salt
- 0 g Black Pepper
- 45 g Rice Paper
- 4 g Cilantro
- 4 g Fried Shallots
- 5 g Thai Chile
Method
- 1. Filling: Finely chop the mushroom, shallot, and green onion.
- 2. Mix into the ground pork with the soy sauce, fish sauce, and a little salt and pepper until evenly combined.
- 3. Sauce: Stir the lime juice, garlic, brown sugar, chopped chili, and fish sauce together until the sugar dissolves.
- 4. Cook the pork in a lightly oiled pan over medium heat until cooked through, then cool to room temperature.
- 5. Dip each rice paper sheet in water, shake off the excess, and lay flat; spoon a little pork into the center and roll into a tight log.
- 6. Spoon the sauce over the finished rolls and top with fried shallots, chili, and cilantro.
