Soft Chocolate Chip Cookies

Ingredients
- 191 g All Purpose Flour
- 113 g Salted Butter
- 100 g White Sugar
- 55 g Brown Sugar
- 4.2 g Vanilla Extract
- 50 g Egg
- 2.4 g Baking Soda
- 1.5 g Salt
- 135 g Semi-Sweet Chocolate Chips
Method
- 1. Melt the butter until almost fully liquid but not hot (~40 s in the microwave).
- 2. Beat it with both sugars until creamy, then beat in the vanilla and egg on low just 10–15 sec; don't overbeat.
- 3. Add the flour, baking soda and salt and mix until crumbly, then press the crumbs together into a ball and fold in the chocolate chips by hand.
- 4. Roll into 12 large balls, space on a sheet and bake at 350°F / 175°C for 9–11 min, until puffy and dry-looking with barely golden edges.
- 5. Err towards under-baking vs over-baking to avoid dryness.
- 6. Cool on the pan 30 min; they sink and firm into a dense, soft crumb.
